Waking up on Monday morning can be downright painful after a weekend of relaxation and sleeping in. Unfortunately, it’s a reality that we all must face, and that got us thinking: What could make Monday morning (or any morning) less manic? A quick, yet delicious breakfast, of course!
Here are 5 healthy recipes that take less than 5 minutes to make. You’ll be so excited to try these tasty dishes that you’ll be up before your alarm goes off! Okay, maybe not, but these quick recipes will help you stay healthy when you hit the snooze button a few too many times:
PBS Breakfast Sandwich
Toast a whole wheat waffle and cut in half. Spread one side with all-natural peanut butter. Top with sliced strawberries, which have less sugar than jelly. Place remaining half of waffle on top.
Pumpkin and Granola Parfait
Fill bowl or Tupperware container with Greek yogurt. Top with canned pumpkin puree. Sprinkle granola on top. Finish with a dash of cinnamon.
Micro Eggs
Scramble eggs and place in microwave-safe container. Add vegetables of choice, such as spinach or tomatoes, and sprinkle cheese on top. Microwave for 30 seconds and stir. Cook another 30 seconds or until eggs are cooked through.
Breakfast Caprese
Toast 2 slices of whole-grain bread. Spread each side with ricotta cheese. Sprinkle kosher salt and fresh pepper. Top with slices of fresh tomato (beefsteak tomatoes work well).
Berry Muffins
Combine ¼ cup quick oats, 1 egg, berries, and a dash of brown sugar to a mug. Mix well. Microwave for 1 minute. Check muffin and keep cooking in 30 second intervals until it is firm.
